In the construction of a chest of drawers the leg (struts) and the middle support are solid. How are they attached?
I have been reading this question about the meaning of the "legs" in a chest of drawers, but couldn't help wondering how the centre of the thing (the long solid piece) is attached to the legs (the short pieces).
Is the leg part attached to the centre support by glue or something similar, or is the solid piece just held together with screws?

Probably both. The legs and middle support would probably be supported by the legs on each end of the assembly, via mortises or tenons. It's not likely the legs were attached without some kind of connector; there's not much point in having a sturdy frame if you aren't also using it for strong connections.
There's no real reason to use fasteners on a cabinet like this. It's far more likely to be screwed together, glued, or nailed, for example.
